Elder Syrup

Every year in May or June I make elder syrup. We all love this syrup from elder flowers. I want to share my recipe with you:

Gather 100 elder flowers and place them in 5 liter cold water for 24 hours.
Strain the elder flowers out and pour the water through a fine mesh or a tea towel.
Mix the elder-water with 5 kg of sugar and 150 g of citric acid (from the drugstore).
Then stir until the liquid is clear.
Boil bottles out before you fill the syrup into them. 
The syrup stays good for 6 to 8 month. 

We mix it with water, sparkling mineral water, tea or pour it over muesli and yogurt. You can also mix it with sparkling wine. I use to put a slice of lemon, some mint and ice in a jar of syrup and water on very hot days - delicious.
